I'm not sure what you mean by holiday mode, but you could place an Olive Branch and you won't get attacked during the duration of 12 hours or 24 hours.

There is no vacation/holiday mode in the game, so while you're gone your neighborhood(s) may be open to attacks. Like what Rooster_ said, there's only the 12 hour or 24 hour olive branches, but if you plan on going for extended periods of time with no internet connection, there's no way that would work for long.

How about telling your Crew Boss Underboss(es) that you'll be out for an extended period of time, as players forget to do this when they have a planned vacation coming up or whatnot. That way, you'll be insured to still be in the crew once you get back (however, if your crew boss kicks you out even though you did give him/her advance notice...just find another crew worth your while). Use as much of your resources as you can with long, extended builds. You can also let your crew mates farm you for any excess resources you can't get rid of, as to deter anyone who does decide to hit your neighborhood not to come back and waste an AO for a resos-less, respect-less trip. Put your troops on hide, and that's one way to do it. When you get back your builds should be finished, you'll be able to farm for resources from crew mates or the standard (inactives, css, gangs, actives if you prefer), and it's business as usual.
